Amanda's Grilled Chicken Breast Recipes

This is the recipe that my family still beg me to make when the grill is brought out. It's so easy and versatile, and can be tried on several different meats. I like it!
















Ingredients  :
1 skinless, boneless chicken breast

Marinade :
2 tablespoon extra virgin olive oil
1 tablespoon lemon juice
If you have a fresh lemon, using lemon zest in this marinade really perks up the flavor, but it can definitely be made without it.
1/2 teaspoon garlic powder
1/4 teaspoon dried oregano
1/2 teaspoon dried italian seasoning
salt and ground black pepper to taste

Method:
- Trim all visible fat and membranes from chicken breasts, I like to make small crosswise slits about 1/2 inch apart down the length of each chicken breast to help the marinade penetrate the meat.
- Dip chicken in lemon juice, and sprinkle with the garlic powder, ground black pepper, lemon zest, seasoning salt, oregano, and italian seasoning. Marinate in refrigerator 6-8 hours or all day if desired. (If you don't have that long to marinate I recommend increasing the lemon juice a little.)
-Preheat grill to medium-hot and grill chicken 20-25 minutes, or until well browned and firm but not hard to the touch. (I've been cooking this slightly less than 20 minutes the last few times I've made it.
